Digital twins in the kitchen

2.8 million tons of food are disposed of each year before they land on Swiss plates - and that shouldn't be the case. In terms of a single person, we throw considerable amounts of food directly into the trash at home: 20 kilos of fresh vegetables, around 3.5 kilos of fresh fruit and over 8 kilos of exotic fruits and berries. Empa researchers have now developed an app that can help prevent food waste. The app is based on a digital twin that allows predictions about the shelf life of food.

In the live stream, our researchers Kanaha Shoji and Jörg Schemminger demonstrate the app and dispel one or two kitchen myths. In the "Innovation Room" at Empa in St. Gallen, the audience takes part in a quiz. Streaming viewers can compete against the live audience. But watch out! As aspiring chefs, our guests are experts in their field!
